How to Make Kheer

Kheer is a traditional Pakistani / Indian rice pudding that is easy to make and delicious. Here's a recipe for making kheer:

Ingredients:

1/2 cup basmati rice
4 cups whole milk
1/2 cup sugar (adjust to taste)
1/4 cup chopped nuts (almonds, cashews, pistachios)
1/4 cup raisins
1/2 teaspoon ground cardamom
Saffron strands (optional)
Rose water or kewra water (optional)

Instructions:

1. Wash the rice under running water until the water runs clear. Drain the rice and set aside.

2. In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent sticking.

3. Add the washed rice to the boiling milk and reduce the heat to low. Simmer gently, stirring occasionally, until the rice is cooked and the milk has thickened, about 30-40 minutes.

4. Add the sugar, chopped nuts, raisins, ground cardamom, and saffron strands (if using). Stir well to combine.

5. Continue to cook the kheer for another 5-10 minutes, or until it reaches your desired consistency. Keep in mind that the kheer will thicken further as it cools.

6. Remove the kheer from the heat and let it cool slightly. Stir in the rose water or kewra water, if using.

7. Serve the kheer warm or chilled, garnished with additional chopped nuts and a sprinkle of ground cardamom. Enjoy your homemade kheer!
