How to Make Samosas

Making samosas involves a few steps, including preparing the filling, making the dough, assembling the samosas, and then frying or baking them. Here's a recipe:

Ingredients:

For the dough:

2 cups all-purpose flour
1/4 cup vegetable oil or melted ghee
1/2 teaspoon salt
Water, as needed

For the filling:

2 medium potatoes, boiled, peeled, and mashed
1/2 cup green peas, boiled
1 small onion, finely chopped
1-2 green chilies, finely chopped (optional)
1 teaspoon ginger-garlic paste
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon coriander powder
Salt, to taste
2 tablespoons oil

Other:

Oil, for deep frying or baking

Instructions:

 Prepare the dough:

1. In a bowl, mix the flour, salt, and oil/ghee.
2. Add water gradually and knead into a smooth, stiff dough.
3. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

 Prepare the filling:

1. Heat oil in a pan and add cumin seeds.
2. Add chopped onions and sauté until they turn translucent.
3. Add ginger-garlic paste and green chilies. Sauté for a minute.
4. Add turmeric powder, coriander powder, and garam masala. Mix well.
5. Add boiled mashed potatoes, boiled peas, and salt. Mix everything together. Cook for 2-3 minutes. Remove from heat and let it cool.

 Assemble the samosas:

1. Divide the dough into small balls and roll each ball into a circle.
2. Cut each circle in half to form semi-circles.
3. Take one semi-circle and fold it into a cone, sealing the edge with water.
4. Fill the cone with the potato filling and seal the open edge with water, forming a triangular shape.

 Cook the samosas:

1. Heat oil for deep frying in a pan.
2. Once the oil is hot, fry the samosas in batches until they are golden brown and crispy.
3. Alternatively, you can bake the samosas in a preheated oven at 375°F (190°C) for about 25-30 minutes, flipping halfway through.

 Serve:

Serve the samosas hot with chutney or sauce of your choice.
