How to Make Sohan Halwa

Here's a recipe for making Sohan Halwa, a traditional Pakistani and Indian sweet:

Ingredients:

1 cup semolina (sooji)
1 cup sugar
1/2 cup ghee (clarified butter)
1/2 cup water
1/2 cup chopped nuts (such as almonds, pistachios)
1/2 teaspoon cardamom powder
A few strands of saffron (optional)
Silvered almonds and pistachios for garnish (optional)

Instructions:

1. In a heavy-bottomed pan, heat the ghee over medium heat.

2. Add the semolina to the pan and roast it, stirring constantly, until it turns golden brown and aromatic.

3. In a separate saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar dissolves. Continue to boil until it reaches a one-string consistency (when a drop of syrup between your fingers forms a single thread).

4. Slowly add the sugar syrup to the roasted semolina, stirring continuously to prevent lumps from forming.

5. Add the chopped nuts, cardamom powder, and saffron strands to the pan. Mix well to combine.

6. Continue to cook the halwa, stirring constantly, until it thickens and starts to leave the sides of the pan.

7. Remove the pan from the heat and pour the halwa into a greased plate or tray.

8. Smooth the surface of the halwa with a spatula and garnish with silvered almonds and pistachios, if desired.

9. Let the halwa cool and set for a few hours before cutting it into squares or diamonds.

10. Serve the Sohan Halwa at room temperature and enjoy this rich and indulgent sweet treat!
